Last week, I tried this healthier version
of this much loved cookie.
They were wonderful!
We all loved them!
Chocolate Chip Oatmeal Cookies
(original recipe found HERE)
2 1/2 cups whole wheat pastry flour
1 cup rolled oats
1 teaspoon sea salt
1 1/4 cups chocolate chips
1 tablespoon vanilla extract
2 tablespoons water
3/4 cup organic virgin coconut oil (softened)
3/4 cup honey
Preheat oven to 350°F degrees.
Mix all the dry ingredients in a large bowl.
Mix the wet ingredients in separate bowl.
Pour the wet ingredients into the dry ingredients
and mix until well combined.
Roll dough into small balls,
flatten slightly and place on greased cookie sheets.
Bake in preheated oven for 18-24 minutes.
Remove from sheets to wire rack to cool.
Enjoy!
