Sweet Cinnamon Biscuits
2 Cups unbleached flour
1 TBS baking powder
1 tsp salt
1/4 tsp baking soda
1/4 Cup oil
3/4 Cup buttermilk
8 TBS butter, softened
3/4 Cup sugar
1 tsp cinnamon
Combine flour, baking powder, salt,
and baking soda in a bowl and mix well.
Stir in oil. Add buttermilk and stir just until blended.
Knead dough on lightly floured surface til smooth.
Roll dough into rectangle about 1/4 inch thick.
Spread butter over dough.
Combine sugar and cinnamon in a small bowl and mix.
Sprinkle over butter. Roll up rectangle,
in a jelly roll fashion. Pinch seams to seal.
Cut the roll into 1 to 1 1/2 inch slices
(using dental floss works best)
Place in 13x9 baking dish. Bake at 400
for 15 to 20 minutes or till lightly browned.
Remove from oven and enjoy! Mmm!
