Sourdough Pizza Friday...

* I was asked recently about our sourdough recipe.
I posted it long ago in a post about our Friday tradition
and thought I would repost it... *

I was asked, in an email, about our pizza nights...
Every Friday our family looks forward to
a sourdough pizza night, Lord willing.
Some nights we have guests and others we do not.
Either way, we love sourdough pizza,
particularly on Fridays.
My beloved always says (smiling, but serious),
"Nobody messes with my pizza night." ;o)
Though he is currently in Iraq {2007},
the children and I still hold the family tradition. ;o)

Mama or Ally usually make the pizzas
but there have been many times the lil' ones help,
the older ones help, their friends have helped,
and Daddy enjoys helping, too. ;o)


Some of the different toppings ideas are:

Cheesy (and with a variety of cheeses)
Pepperoni
Stuffed Crust
Bacon and Bell Peppers
Ham and Pineapple
Buffalo Chicken & Pepper Jack Cheese
Spicy Pizza
Taco Pizza
Chili Pizza
The Pig (pepperoni, ham, bacon)
Veggie Pizza
Fried Squash
Philly Cheese Steak

We always enjoy eating the leftovers
throughout the weekend and upcoming week.
Mmmmm!

The dough can, also, be used for bread,
cinnamon rolls, and more. YUM!

It sounds a little complicated, at first,
but it is well worth it.
It is not like the typical sourdough
that you would find in a bakery.
It's sweeter and oh so delicious!

Wow! You toss that dough, girl! LOL! I made some Calzones the other night, while my parents were here, and I commented that I would love to know how to toss the dough. LOL!

Those pizzas look absolutely luscious. We love our pizza night, too, but tonight I was just worn out and didn't get to it. I spent the afternoon at the shop with the truck for an unexpected visit. So much for a quick trip to the post office and back...

We have also made homemade pizza before. I have also made homemade pizza sauce. One thing I like about making homemade pizza is that you can custom make it with whatever toppings you like. You can put however much cheese you want, etc.

That looks wonderful!! My there is alot of pizza there! I would think it would be leftovers for several days. The thing about pizza is it is just as good leftover!

We used to have homemade pizza every Friday night, too. I've just recently been thinking I needed to get that back on the menu. I've never had a crust recipe that I just loved though; I've printed yours off to try. :o)

Wow, those pizzas look delicious. Good job! I commend you for having the patience to roll out the dough and make it. I should learn because pizza night in our family is drive down to Papa Nicks and grab a pie! :)

You're very welcome for the recipe. I tried making a wheat crust but my husband didn't like it so we use the sourdough (which he loves). I hope to try it with wheat one of these days.
I didn't even notice that it said 'bread flour'. lol I simple use unbleached flour. Hope that helps.
I'd love to know what y'all think of it when you try it.

Thank you, that did help! I made the bread loaves last weekend with just the unbleached flour and they were great, although with my oven I think I may need a little longer than 30 min. at 325. My dough is sitting right now to try our pizza's tonight. I have two more questions -- I hope I am not being a bother!
1. When you say not to stir with anything metal -- is that only when touching the starter, or is that in mixing the dough, too? What do you use when mixing your dough?
2. Can you get more than one cup of starter out at a time? For instance, can I make dough for pizza and dough for bread at the same time? Or does that mess up the starter?

Thank you SO much for your help. I am getting serious brownie points this week for finally making sourdough bread! : )

I so glad y'all are enjoying the sourdough! ;o)
To answer your questions...

1. I 'think' the directions do not want the metal to touch the starter at all, including when mixing into the dough. The metal (I think) causes it not to rise... I'm not sure if it does anything else, though.
To be on the safe side, I use a firm plastic spoon or a wooden spoon.

2. Yes, you can use more than one cup of starter at a time. It doesn't mess up the starter but you may get low on the starter. To help this, I will sometime double feed it on Thursday or I will take it out on a Monday or something and give it a single feed.
